I love vegetables. Not that I’m a vegetarian, and the idea of a good rib-eye makes me salivate. But that’s not on the agenda today. I will make a refreshing salad of courgettes with mint and chillies.
I don’t understand why vegetables have such a bad reputation. It doesn’t make sense, they do taste so good. Maybe it’s just the way people cook them? Often boiled or drowned in cream. No cream here, nor too much fat.

Courgette salad with mint and chilli
2 people – Difficulty: easy
Preparation time 10 min
- 1 courgette
- 1 lemon
- a small red chilli pepper
- A few sprigs of fresh mint
- Olive oil
In a large bowl, squeeze the juice of half a lemon and add one or two dashes of olive oil, a good pinch of salt and pepper. Then finely chop the mint leaves and half a chilli. Add everything to the bowl.
Then grate the courgette and place it in the salad bowl. Mix the raw courgette salad well. It’s your turn to try it.
