It’s official, the days are getting shorter and shorter. Yesterday, at 4 pm it was already dark… It feels like being in Japan. Outside, it’s grey and cold. Good news though for all soup lovers: the season is now open again!

So to fight the ambient greyness, we cooked a soup full of colours and vitamins.

As is often the case, what drives us back to the kitchen is tasty meals. But it also has to be easy, fast, and with seasonal products. Without further ado, here is the list of the main ingredients of our lentil soups:

  • Coral lentils, onion, leek, carrot, 1/2 lemon, 1 l of liquid: 75 cl of vegetable stock and 25cl of water.

Well, as it is a soup, a real one, and we still have all our teeth, we enjoy it raw and without mixing. But of course, if you prefer a more smooth texture, please yourself and give it a mix. To complete the picture, we also added some spices and herbs.

  • olive oil
  • black peppercorns
  • green peppercorns
  • cumin
  • chillies
  • a few sprigs of coriander

Here’s my favorite step: once I’ve gathered my ingredients and cut them up, I stir-fry my vegetables for 2 minutes, then add the rest of the ingredients and let them simmer quietly for about 20 minutes. During this time I take it easy 🙂

Serves 4 – Difficulty: super easy
Preparation 15 min – cooking 20 minutes

  • 250 g coral lentils
  • 1 onion
  • 1 carrot
  • 75 cl of vegetable stock
  • 25 cl of water
  • 1 chili pepper
  • 1 leek
  • juice of 1/2 lemon
  • 1 tablespoon of oil
  • 1/2 tsp of cumin powder
  • black and green peppercorns
  • 5 sprigs of coriander
  • salt

Cut the onion into quarters. Clean and slice the leek. Peel and slice the carrot. Heat the oil in a large saucepan, then add the vegetables, lemon juice, and cumin. Cook for 2 minutes over medium heat while stirring.

Add the lentils, vegetable broth, and water, as well as the chilli pepper and peppercorns. Lower the heat and simmer from 15 to 20 minutes, stirring occasionally.

Thinly slice the coriander and flavour your soup.

Optional: remove the soup from the heat and put it in a blender, blend and serve with fresh coriander
