The ad says that you should eat 5 fruits and vegetables a day. But what does that mean? 4 vegetables and 1 fruit? Or 4 fruits and 1 vegetable? I have no idea! All I know is that I love vegetables, all vegetables!
Well, except for okra… but nobody’s perfect. And you, what are your favorites?
However, when it comes to cooking them without spending 10 hours in the kitchen, it’s a different matter. So how do you go about it?
Roasted vegetables are so easy to make. Just choose your favourite vegetables and cut them into smaller or larger pieces depending on their cooking time so that they can have the same cooking time.

For example, for a tomato: cut it into quarters. Mushrooms can be left whole. On the other hand, peppers and carrots, which need more time, are sliced. The onions can be cut into quarters or sliced, and the fennel is finely sliced. And so on.
Then we prepare the seasoning. A little olive oil, salt, pepper, thyme, rosemary, lime, and more if you like. We massage our vegetables well with it and put them in the oven for 25-35 min, depending on your oven. Ours is a gas oven, so it’s between 30 and 40 minutes of cooking time.

This easy side dish goes well with meat, fish or even just with pasta. The vegetables retain their delicious flavours. A treat for the eyes as well as for the palate.

Roasted vegetables
4 people – Difficulty: very easy
Preparation 15 min – Cooking 30 min
- 1 red onion
- 2 carrots
- 1 pepper
- 1 courgette
- 2 tomatoes
- Mushrooms
- 1 fennel
Dressing:
- 1 lime
- olive oil
- salt, pepper
- thyme
- rosemary
Cut the vegetables into smaller and larger pieces so that they have the same cooking time.
Season with a little olive oil, salt, pepper, thyme, rosemary and lime. Lightly massage the vegetables to coat them with the seasoning.
Bake in a hot oven for 30 to 40 minutes at 200°. Serve as a side dish with grilled meat or simple pasta.
