Of the epic of the burger, from poor man’s food to junk food, the gourmet menu, the famous French-style hamburger, its English counterpart with lobster, or the smoking street-food from the United States, I will not breathe a word. One thing is for sure, the quest for the perfect burger never ceases to amaze us.

Moreover, there will be no salad leaves or sliced tomatoes. Gone are the onion slices, the ketchup and the mustard. Welcome to the “Home Made Burger” in three steps:

  • a wickedly good bread,
  • tender and juicy meat,
  • a sauce with small onions.

A few grated gherkins and a slice of melting cheese as a bonus. These are the ingredients for a great home-made burger.

Original homemade burger

6 people – Difficulty: medium ++.
Preparation 25 min – Cooking 25 min – Resting time 3 hours

Bread:

  • 500g of flour,
  • 21g yeast,
  • 25 cl of milk,
  • 100g soft butter,
  • 1 egg yolk + 1 egg,
  • 2 tablespoons of sugar,
  • Sesame or poppy seeds

The sauce :

  • 80g of homemade mayonnaise
  • 2 gherkins,
  • 1 tablespoon of fried onion,
  • ½ grated white onion,
  • 1 level teaspoon of sugar,
  • ¼ bunch of snipped chives.

Chopped steak :

  • 700g minced beef,
  • 200g of smoked bacon,
  • 300g of thickly sliced mountain cheese.

Bread :

Dissolve the fresh yeast in the milk. Mix the flour, salt, and sugar. Add the soft butter and the two egg yolks. Knead the dough for a good ten minutes. Leave to rest for 1 hour. Fold the dough and divide it into 6 pieces of about 120g each.

Place the dough pieces on a baking sheet covered with baking paper, spacing them well apart. Cover with a clean cloth and leave to rise for 2 hours. Bake the buns for 15 minutes in a 180-degree oven with a small bowl of water in the middle of the baking tray.

The sauce :

Grate the gherkins, drain them by pressing them between your hands. Using a mortar and pestle, grind the fried onions to a powder. Mix them with the gherkins and the rest of the ingredients. Set the sauce aside in a cool place.

Chopped steak :

Prepare 6 steaks of 120g of minced beef. Heat 4 tablespoons of olive oil and a pinch of salt in a second pan. Fry the steaks on high heat for 1.5 minutes on each side. Arrange the steaks on the buns and add the melted cheese, bacon, and sauce.
