Every year, at the end of November, Americans get ready to celebrate Thanksgiving. This day is a great occasion to gather with family, relatives, and friends around a delicious meal. And why not treat ourselves with a savoury pumpkin pie.
As for a traditional Thanksgiving dinner menu, there is turkey, creamy mashed sweet potatoes and, gravy. Some green beans, corn and, cranberry sauce. And of course, a pumpkin pie.
I was wondering how to recycle my Halloween pumpkin. This is the perfect recipe for that.

First, we must make our pumpkin purée for the filling. You can use a canned purée to save time, but it’s better to make your own. For mine, I chose a medium pumpkin.

Pumpkin pie
4 people – Difficulty: medium
Preparation 40 minutes – Cooking time 50 min
- 300 g of pumpkin
- 1 puff pastry
- 1 whole egg
- 2 egg yolks
- 100 g sugar
- 200 g ricotta cheese
- 60 ml milk, or condensed milk
- 4 tbsp of liquid cream
- 1 tbsp cinnamon powder
- 1/2 tsp ginger powder
- 1/4 tsp nutmeg powder
- 1/4 tsp salt
Remove the stalk and cut the pumpkin in half and remove the seeds with a spoon. Place the pumpkin face down on a baking tray with baking paper. Cook for 30 to 40 minutes, depending on the size of the pumpkin.
Leave to cool and then scoop out the flesh with a spoon before puréeing. For more convenience you can use a blender or a mixer, it will give a smoother and more regular texture.
Preheat the oven to 200 °C and pre-bake the dough. You can add weight by putting dried vegetables or small balls on the dough to prevent it from puffing up. Make sure you put baking paper on the dough so that the weights don’t stick. Bake until the edges turn slightly golden.
In the meantime, combine the eggs, the sugar to the purée and mix the filling. Then add the milk, cream, and ricotta cheese and mix again. Finally, add the spices: nutmeg, cinnamon, and ginger.
Pour the filling on the baked crust, and bake for 40 to 50 minutes. The deeper the pan, the longer the baking time. To know if the pie is ready, slightly shake the pan, it should not giggle.
